Zucchini Boats

DELICIOUSNESS AHEAD!!

Here was the picture off of Pinterest.

I pinned these on Pinterest awhile back. They looked good, but I don't like Zucchini or Tomatoes. Earlier this week, I decided to give them a try and I loved them! I don't know if my taste has changed over the summer or if it was the fact that they were covered in Olive Oil or Cheese, but either way, the recipe was a win with this picky eater and the rest of my family!

These were mine. The recipe said put cheese below the tomatoes but the people in my family like to load things with cheese! 




Cut a zucchini in half lengthwise. 
You may need to trim a little off the bottom so it sit still in a baking dish.
 Scoop out the center where the seeds are with a spoon. 
Brush the surface with a mixture of crushed garlic, olive oil, salt and pepper.  
Arrange halved tomatoes into the grooves, sprinkle with bread crumbs and bake in a 350 degree oven for about 30 minutes. 
Remove and place mozzarella in between the tomatoes. 
Put Zucchini Boats back in the oven under the broil until golden and bubbling. 
Remove and sprinkle parmesan cheese. 
Enjoy!

Who Nu?

I found these at the grocery store Friday night and was very intrigued. I looked at the back of the box and it read:

As much Fiber as a bowl of Oatmeal
As much Vitamin C a a cup of Blueberries
As much Vitamin A as an 8 oz glass of Tomato juice
As much Vitamin B12 as a cup of Cottage cheese and Fruit
As much Calcium and Vitamin D as an 8oz glass of Milk
As much Iron as a cup of Spinach
As much Vitamin E as two cups of Carrot juice.

I went back and forth on buying a box. I thought if it was so healthy and nutritious they were not going to be delicious. I bought a box anyway and OMG, they taste just like chewy Chips Ahoy cookies! I was pleasantly surprised and will definitely be buying these cookies again. They even make some "Oreos" and I love my Oreos so I can't wait to try those!

Update: I tried the "Oreos" three days ago and they are delicious!! So freaking good that our family devoured the box and we already need to go to the store to get more!

The Healthy Leader

For school, I am reading a book by Elaine McEwan called, "How to Deal With Parents Who Are Angry, Troubled, Afraid, or Just Plain Crazy." I was reading chapter four about creating a healthy school and came across a section on healthy leaders. As a leader, I found this section particularly interesting and wanted to share it.

The healthy leader has the following characteristics: 

- Is able to take a position based on values, principles, and beliefs
- Is aware of personal emotions
- Can manage anxiety
- Can manage anger
- Is able to make adjustments in behavior and feelings
- Stays connected to others
- Recognizes and can deal with emotions in others
- Tolerates differences
- Encourages dialogue
- Defines self from within
- Lives with a purpose in mind
- Moves forward
- Stretches and grows
- Is ready for and can cope with the pain that comes with leading

How are the leaders where you are?
