Hot Dish!

For Christmas, I received a Hot Dish Cookbook. Minnesota Hot Dish Cookbook to be exact. I have tried a few recipes and they all turned out well so I am posting them here for easy access.

I'm a sucker for Couscous. Mr. Harry hates it.

Sunday Dinner

Harry cooked a Cornish Hen in the Instant Pot. I made Little Bits of Real Food's Twice Baked Breakfast Sweet Potatoes. The potatoes were good. Harry ate two so that tells me he thought they were pretty tasty.

Eating gizzard.

Next time I want to whip the potatoes with my hand mixer. I also need to cook the minced garlic lol- it was crunchy. Live and learn I guess!

We broiled it for 5 minutes in the oven and the skin was amazing!
