Greek Yogurt Waffles

I've been on a Greek Yogurt kick lately and I found this article online titled, "51 Healthy Greek Yogurt Recipes for Any Meal" by Laura Newcomer. There were many recipes I would like to try however it was 9:30 in the morning so I decided to try a breakfast recipe. I chose to make Greek Yogurt Pancakes. 

Obviously, I turned mine into waffles and they were delicious! I used plain Greek Yogurt and added a Banana and a couple handfuls of blueberries. I'll definitely be making these again, but next time, I want to try Blueberry Greek Yogurt instead of plain.

Storm Aftermath and 20ft Sinkhole

It stormed for two days where I live. There were trees down everywhere- We couldn't even get out of the neighborhood! It was like trying to find your way out of a maze! There were trees on cars, houses, businesses, and through fences. I incorporated some pictures below.

Then, close to where I live there was a 20ft sinkhole! Apparently it was a 63 year old pipe that burst and not the storms that caused this massive sinkhole. I've never seen a sinkhole before and this is a road that I drive frequently so it was a little too close to home for my comfort. Thankfully, no one was hurt!

Goodbye

Two weeks ago I had to say goodbye to one of the very first families I ever babysat for. It was a sad goodbye, but we exchanged phone numbers, e-mails, and addresses so at least we will be able to keep in touch that way. Even though I miss their family very much I wish them all the best in South Dakota!

I whipped this simple color matching activity up in 15 minutes. It will be a great way to introduce the 1 year old I nanny for to colors! I'm hoping to get more "big" pom-poms from Micheal's and add more colors as she gets older.

Father's Day

I have been so overwhelmed with homework and my summer classes that I didn't even get around to creating a Father's Day card until today. Oh well, better late than never!!

Bitter Neighbor

In my neighborhood, we meet at the garbage cans to talk after a long day working on the yard. At least one neighbor will usually come over with a beer or other beverage in hand. Last week, our neighbor brought "Bitter Neighbor" over to us as a joke. I thought it was hilarious and think this would be a great gag gift! 

By the way, I love my neighbors!! We just had one family move to South Dakota on Saturday and 90% of our block was in tears at the going away party... We are that close!

Toast

I don't like Banana's dipped in Chocolate so why would I like Banana's on Peanut Butter toast? 

Last week, for breakfast, I made peanut butter toast and put four teeny slices of Banana on it. It was delicious! The next morning I tried it again only this time with more Bananas. By day three, I covered the whole piece of toast with Bananas and it was so good! Not only does this breakfast fill me up but it seems to give me energy for the entire day!

My name is Liz.
I am 24. 
I live in Minnesota.
I love Jesus.

I love spending time at the Sculpture Garden.

I have a passion for working with young children in particular with infants, toddlers and preschoolers. I am working on my B.A. degree in Early Childhood Education and should graduate Fall 2014. I am not sure what I want to do with my degree. I love the family I currently nanny for, but I know I cannot do that forever. I have thought about being a Preschool teacher, going into Early Childhood Ministry or running a childcare out of my home. For now, I am trusting in God's plan and that He will lead me where I am supposed to be.

1. I am obsessed with children's literature!
2. I refuse to touch raw meat, which is half the reason why I don't cook. I bake!
3. I have two cats and a dog.
4. I want to move to South Carolina to be closer to my cousins, an ocean, and warm weather.
5. I HATE snow! I am terrified to drive in it, but I am slowly getting more confident.
6. I was in Synchronized Swimming for two years. I wish I never gave it up.
7. I like to be independent and do things on my own. According to my mom, "I march to the beat of my own drum."
8. I have never been out of the country.
9. My dream vacation would be visiting Hershey, Pennsylvania.
10. Cars is my favorite movie!
11. Spring is my favorite season, I love rain!
12. I worked as an Assistant Manager at Children's Place for two years before going back to school full time.
13. So far in my college career I have been to four different colleges and switched my major five times.
14. I do not know how to whistle.
15. I am a big kid at heart! :)

Who Nu?

I found these at the grocery store Friday night and was very intrigued. I looked at the back of the box and it read:

As much Fiber as a bowl of Oatmeal
As much Vitamin C a a cup of Blueberries
As much Vitamin A as an 8 oz glass of Tomato juice
As much Vitamin B12 as a cup of Cottage cheese and Fruit
As much Calcium and Vitamin D as an 8oz glass of Milk
As much Iron as a cup of Spinach
As much Vitamin E as two cups of Carrot juice.

I went back and forth on buying a box. I thought if it was so healthy and nutritious they were not going to be delicious. I bought a box anyway and OMG, they taste just like chewy Chips Ahoy cookies! I was pleasantly surprised and will definitely be buying these cookies again. They even make some "Oreos" and I love my Oreos so I can't wait to try those!

Update: I tried the "Oreos" three days ago and they are delicious!! So freaking good that our family devoured the box and we already need to go to the store to get more!

When God calls you, He equips you!

Ever feel like you are not enough? That you are incapable of completing a task or project? Take comfort in knowing you have everything you need to do everything God wants you to do. I’m in the process of reading Altar Ego by Craig Groeschel and he wrote, “God doesn’t ask people to do something, then realize later that they weren’t equipped to do it and say, ‘Whoops! My bad! I don’t know what I was thinking. You don’t have what you need to do that!’” When God calls you, He equips you with everything you need to fulfill your purpose on Earth.

As human beings, we constantly compare ourselves to one another. We say things like, “I am not as good of a writer as Leah,” or “Brittany is really creative and I never have been,” or “I sure wish I had Joe’s charisma.” 2 Corinthians 10:12 says, “We do not dare to classify or compare ourselves with some who commend themselves. When they measure themselves by themselves and compare themselves with themselves, they are not wise.” Instead of comparing ourselves to one another, we should be focusing on the unique ways God created us. We all have strengths and we all have weaknesses.

I can’t draw, I can’t fix a car, and I can’t build things. Not being able to do these things does not bother me because I know I have other strengths. I know God didn’t create me to be an artist. I know He didn’t create me to be a mechanic. I know He didn’t create me to be an architect. God created other people to do these things. What is one thing you cannot do that you need to stop focusing on? When you stop focusing on the things that you can’t do and turn your attention to the things you can do, you’ll discover you are God’s masterpiece. You are God’s creation and He has equipped you with the tools you need to live a life of purpose.
